Young Coconut

So, I woke up this morning to make myself a blueberry/coconut smoothie with a dash of cinnamon - of course, for me, something way more involved than it should be.  Soaking unsweetened coconut in warm milk to make coconut milk, BREAKING open a young coconut with a HAMMER to get the coconut water and coconut meat....but I never realized how WORTH it this was.

When was the last time you had a young coconut?! Frankly, I don't know when the last time I even had one was, but I know that I will be frequenting the health store to pick one up quite often, and it's not THAT big of a pain to open it. I have never tasted something so amazing in my LIFE and the smell of the coconut after getting the water and meat out is STUNNING. Yes it is still sitting in my kitchen at almost 4 PM so I can get a whiff of the tropics (NOTE: a hurricane is approaching so it is appropriate?) Needless to say, it made the smoothie triple delicious.  So please, if you want to taste something amazing in pure form, go for this - and it's fun. Don't like coconut? Still try it.  This doesn't taste like "coconut" - it's smoother, more subtle, creamy, dare I say sexy!? Give it a whirl.
